obtained by cold pressing of the broken and roasted fruits of the small tree Thorny argan ( L. ) Skeels, endemic to southwestern Morocco.

The oil obtained is composed of 99% triglycerides.

Unsaturated fatty acids are the most consistent fraction, in particular oleic and linoleic acids, while linolenic acid is present only in trace amounts.

Important for the activity of the oil is the fraction of unsaponifiables including carotenes, tocopherols (present in a double percentage compared to olive oil and characterized by alpha-tocopherol), triterpene alcohols, sterols and xanthophylls.

The virtues of this oil therefore seem to be attributable to the eutrophic and antioxidant characteristics of the tocopherols.
